Ok...Ok...I've Removed The Comment Verificaton...

After doing more reading and taking note of the comments on my blog, I have decided to do away with the comment verification for now.  After making some adjustments I will see how it goes. 

I have join a new site and from time to time will re-post some of the recipes I come across that I think all of you would enjoy.  After having been diagnosed as a diabetic I have joined several sites to help me manage my diabetes, one of them is the American Diabetic Association.  The following recipe is from one of their new cookbooks and it looks scrumptious.

Baked Turkey Meatballs
Baked Turkey Meatballs

Recipe from The Comfort Food Cookbook by Robyn Webb
A tip from the author: You can serve these meatballs with whole grain pasta or brown rice and a side of sautéed broccoli or carrots.
Prep time: 25 minutes
Cook time: 1 hour

Ingredients:
1/2 teaspoon olive oil
1 pound lean ground turkey
1/2 cup grated carrots
1/2 cup grated onions
1 teaspoon fresh thyme
1 teaspoon lemon zest
1 teaspoon parsley (finely chopped)
1/4 teaspoon ancho chile powder
1/4 cup white wine
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
1 tablespoon grated Parmesan cheese (optional)

Instructions:
Preheat the oven to 350 degrees F.

Use olive oil to lightly oil an 8x8-inch square baking dish.

In a large bowl, thoroughly mix all of the remaining ingredients, except for the Parmesan cheese.

To form the meatballs, pull a handful (about 1/2 cup) of the turkey mixture and toss back and forth in your hands to form a ball. The ball should form rather easily.

Once the meatballs are formed, place them in the baking dish.

Cover with foil and bake for 40 minutes. Remove the foil and continue baking for an additional 15 minutes.

Remove meatballs from the oven and sprinkle with Parmesan cheese.

Serves 6; Serving Size = 2 meatballs

I love to try new recipes, now that I am more CARB aware and am limited in the amout of carbohydrates I can have,  I find it difficult at times to try new things, that I would really like to fix, when the recipe does not include the nutritional information .  I figure there are other RVers out there who are like me, so from now on I will include the nutritional information when posting a recipe.

  1. I have only tried my fitness pal and weight watchers Mobil apps. Some days I do good. Some says not so good. It is a never ending battle for me with weight.
